Lawson launches AI-generated food line with pickle lemon tarts and yogurt bread
The Japanese convenience store chain is rolling out three experimental products conceived by generative AI, starting September 29 at limited locations in the Kanto and Koushinetsu regions.

Japanese convenience store chain Lawson is launching a line of food items designed by generative AI, marking its first time bringing AI-conceived products to market. The company will begin selling three items starting September 29 at limited locations primarily in the Kanto and Koushinetsu regions.
The three products are Pickle-flavored Lemon Tarts, Red bean paste, Butter, and Yogurt-filled Sakadane Bread Rolls, and Japanese-style Parfait Salad. Lawson's development process involved using generative AI to generate initial ideas, which product developers then refined through repeated prototyping and testing.
The company deliberately excluded past sales performance statistics and market data from the AI system to draw out ideas "unbound by existing concepts or market trends," according to Lawson's press release. A human development team moderated and tested all final products before release.
Lawson stated that customer feedback, sales projections, and market data from these releases may lead the company to expand the AI-based product line in the future.
FamilyMart, another major Japanese convenience store chain, has taken a different approach to AI product development. The chain announced an AI-designed French-style canelé pastry made with sweet potato puree and caramel sauce is now available. FamilyMart previously released an AI-generated biscuit sandwich filled with milk cream in July, which the company reported as successful. The chain plans to release 10 new AI-generated products by the end of the year.
